One of the many reasons we've enjoyed traveling with Hello World through Central America and the South Pacific is our mutual enjoyment of yummy things from the galley. This is Brit's recipe for baguettes, which she even had requests for from French cruisers! But be warned, you really do have to knead the dough as long as she says.
Ingredients
8 cups flour (wheat preferred, white ok)
3 tsp. salt
1 Tbsp. yeast
2 cups warm water
1 egg, beaten
Put flour in large bowl, mix with salt and yeast. Stir in warm water and make a soft dough. Knead for 10-15 minutes until the dough shows some bubbles. Let rise in covered bowl for 45 minutes. The dough should be double size by then. Punch down the dough and knead a little. Divide dough into four parts and knead each part for a while. Form 40 cm long rolls and place on a greased cookie sheet. Let rise for another half hour. Brush baguettes with beaten egg and cut the surface. Bake in preheated oven at 425 degree F for about 35 minutes. Put a cup of water into the oven to get a nice crust.
