We finally gave in and got a meal service, what a great idea. There are all these recipes that are teaching us new ways to make veggie sides. This is typical, delicious and easy.
Ingredients
Cauliflower
Red onion
Red bell pepper
Slivered almonds
Feta cheese
Preheat oven to 375 degrees. Cut cauli into bite size pieces. Cut red onion into 1/4 in vertical strips. Medium dice red pepper into 1/2 in pieces. Heat oil in large saute pan. Add cauli and onion, lightly season with salt and pepper. Stir to combine and cook 5-7 minutes, until cauli begins to brown, stirring occasionally. Add bell pepper and almonds, stir to combine. Cook 3-4 minutes until cauli is tender. Remove from heat and sprinkle with feta cheese.
