This is one of my favorite "clean out the fridge" recipes - a great way to use up leftovers from other meals.
Ingredients
2 cups cooked rice
2 eggs
green onion
salt and pepper
crushed red pepper
4 Tbsp oil
2 Tbsp soy
1 tsp sambal oelek
meat and veggies
Beat eggs with salt, pepper and crusheed red pepper. Heat 2 Tbsp oil in wok, cook meat then add eggs. Scramble together and remove to plate. Clean the pan, add 1 Tbsp oil and veggies. Cook and remove to plate. Add 1 Tbsp oil and rice, soy and sambal oelek. Stir fry, add meat and veggies into rice. Top with green onions.
