This is a great recipe for Smoked Salmon dip. My friend Debby ( from Alaska ) tasted some at Hiram's once when she visited Seattle and went home and made up the recipe for me. It's always a favorite in the northwest and I've learned you can find frozen smoked salmon in the most remote places. You'll pay a king's ransom for it, but it can be had when the craving strikes.
Ingredients
Smoked salmon - about half a small can size piece, less if it's the frozen stuff
8 oz. cream cheese
1/3 cup finely minced red onion
1 tsp lemon juice
1/4 cup finely chopped fresh parsley or about 1.5 Tbsp dried
dash black pepper
good shake cayenne pepper to taste
Flake salmon and mix into cream cheese with fingers. If using frozen salmon, thaw and chop finely with knife. Add other ingredients. The longer this sits before eating the yummier it gets.
