While we're home I can buy Gnocchi at the store, but the time may come that I need to learn to make it myself. It looks easy enough. This recipe adds a lovely sauce with sausage and spinach, and is delicious. It calls for regular sausage but I sub Isernio's Chicken Sausage when I can get it.
Ingredients
2 ea 9 oz pkg Gnocchi
1 Tbsp olive oil
1 medium yellow onion, finely chopped
1 lb Italian sausage
1 garlic clove
5 oz baby spinach
1/4 tsp each salt and pepper
3/4 cup grated parmesian
Cook gnocchi and reserve 1/4 cup cooking liquid. Cook onion in oil till soft with garlic. Add sausage and cook. Add spinach, salt and pepper, tossing till spinach wilts, about 3 mintes. Add drained gnocchi, reserved liquid and parmesian.
