We learned from our hosts in Japan that making rolls is unnecessary. They do what they called "Freestyle Sushi", which is just putting all the ingredients in dishes on the table, with nori squares cut in quarters. It's so much fun making hand rolls from your choice of ingredients. This will be super fun as a potluck once we're out cruising again. Here is the basic rice recipe.
Ingredients
2 cups short grain rice
2 1/3 cups water
7 Tbsp rice vinegar
1 Tbsp salt
2 Tbsp sugar
Wash rice and drain. Cover wth water and soak 30 minues. Cook rice with water - when starting to boil turn to low and cook for 10 minutes, remove from heat. Mix dressing ingredients, pour over rice and cut in with wooden spoon. Cool rice to room temp with fan to stop cooking.
