Ingredients
1 med-large cucumber
2 cups plain yogurt
red onion
salt and pepper
1 tsp dried or 1 Tbsp fresh dill
1 Tbsp olive oil
1 Tbsp lemon juice
2 sm-med cloves garlic
Peel and seed cuke. Grate and squeeze to remove water. Add to yogurt. Chop a small amount of red onion finely and add with good pinch salt and pepper, dill, olive oil, lemon and garlic. The longer it sits the better it gets.
