This is a yummy side dish that works great for potlucks. Simple, and as always, uses only ingredients usually onboard or relatively easy to find in third world countries.

Cuban Black Beans

1 can black beans
1 med onion
1 green pepper
4 cloves garlic
1 tsp cumin
1/2 tsp dried oregano
1/2 tsp salt
1 Tbsp red wine vinegar

Saute onions and peppers in a little oil. Add garlic and cook until soft (add juice from black beans if necessary). Add everything else except red wine vinegar and cook 30 minutes. Add vinegar right before serving.
