This salad recipe came from my friend Debbie Cook years and years ago. Any time fresh veggies are plentiful and cheap we enjoy a batch of Greek salad.

Greek Salad

Dressing:
1 clove garlic, minced
1/2 tsp. salt
2 Tbsp. lemon juice
3 Tbsp. wine vinegar
1/2 tsp. cumin
1/2 cup olive oil
1 tsp. fresh or 1/2 tsp. dried oregano
1/8 tsp. pepper

Seasoning Mixture:
green onions, chopped, with tops
3/4 cup pitted Greek olives
4 oz. feta cheese, crumbled

Salad:
2 large cucumbers, peeled and diced
1 red bell pepper, diced
1 green bell pepper, diced
4 large tomatoes, seeded and diced

Mix dressing ingredients. Make seasoning mix. Combine both together with salad ingredients. Be sure to seed the tomatoes or the salad will be too runny.
