Another super simple recipe (seeing a pattern here yet?) and yummy salad.

Thai Cucumber Salad

equal parts of sugar, water and rice vinegar

shallots or mild onion
fresh cilantro
ground unsalted peanuts

Heat dressing ingredients about 2 minutes to dissolve sugar. For 4-6 people I use about 1/2 cup of each. Very thinly slice cucumbers and shallots/onion. Add chopped cilantro to veggies. Pour dressing mix over the top and refrigerate 3-4 hours. Garnish with peanuts just before serving.
