Gauch Mato Salad
This is a salad we ate a couple of times at our favorite steakhouse in Seattle (El Gaucho). I'll never make it exactly as delicious as they do, but this is a great use of tomatoes needing to be eaten before it's too late.
- Ingredients
- tomatoes (beefsteak slices or anything chopped up is fine)
- red onion
- red bell pepper
- feta or blue cheese
- basalmic reduction
- olive oil
- Chop tomatoes. Top with chopped red onion and red pepper. Crumble blue or feta cheese on top of tomatoes, then add a small amount of vinegar and oil. For presentation purposes, El Gaucho serves this as beautiful slices of huge beefsteak tomatoes.
